While i was playing around i obtained a hunter skill book ... to remove a beasts heart ... but how do i do it?

Not sure, but I suspect if you have the skill looting a beast would make its heart turn up in the looting window.

Exactly. But note that this doesn' t work with every beast, spiders for example don't have a heart in nehrim.
