SureAI seems to have made no changes to the original Skyrim stat system at all, so it doesn't really work with Enderal. The dungeons are never marked as cleared for example, so even if you finish them, they won't show up in the stats. The plucked wings are simply the butterfly wings you have collected. As for the rest, it's just Skyrim stuff, best to ignore it.
