How do these work in relation to Oblivion? Do you need to know some magic or is there some NPC that does it for you as I haven't seen those pedestals around? Can I choose any magic effect I happen to know like in vanilla O? Which creatures give grand souls?

there aren't soul gems per say, for enchanting anyway. you acquire crystals form various creatures and in crates & chests (well sometimes). the crystals work like segil stones from oblivion. but they are hard to find though.

I've seen crystals like the one from T-rex and the other gems but surely there are soul gems.

I have grand, great etc., dozens of them. Also weapons and scrolls with soul trap. Just wonder what could give me a grand soul and what I could do with it?

Crystals are pretty easy to find, those creatures that look like Ice Dwarven Guards 100% drop a gem

Soul stones can only be used to refill magic weapons.
Gems are used for enchanting, you can find them in almost all kind of places.
