I don't know if this is an omission, or whether I'm simply not looking in the right place.
I've met several teachers who have offered to train me. However, when I look in my journal (using the TAB key) all I can find is the map and the active/completed quests.
So, if they're being noted in the Journal and I'm being blind, what exactly do I have to do to find those notes?
A screenshot would be very helpful, if at all possible.

It should be listed under quests, just search for it should list all the ones you have met, location and what they teach, like anormal quest.
