So, I'm trying to plug the rat holes in the mine. I guess I am supposed to move the blocks, but the z key has no effect on them. I can move rat corpses this way, but not the stone blocks. I am not sure what to do. Fresh install, no mods.

Try the Y key...on some keyboards these keys are switched
