I had a huge advantage with my invisibility spell and my sneak skill at over 100. I would cast invisibility whenever she found me, move elsewhere, then sneak attack her with my bow from behind. If you aren't playing as a rogue, I'm not sure what to suggest.

[+]: If you don't mind cheating, you could always use the console command "kill." Just select Sarantha and type it in.

Got it, she is dead.

[+]: The schockwave was not enough to kill me, it would throw me away right into the spike boards. And that killed me. So every time she started casting the spell i would made sure that my back was secure against one of the walls inside the arena. After the schockwave i would drink a potion and started blasting her with fire balls.

Ahhhh, yes I forgot about that.

[+]: Those things were very irritating. I had to reload several times when I was thrown into them.
