So the game launches, but the main menu screen has a purplish/pinkish background, and when I try to load a save, it gets stuck infinitely. I am using the latest update and have no idea what could be causing it.

did you use the launcher to install and to launch Enderal? Please do not unzip it yourself.
Did you quit the installation process of the launcher?

Which download platform have you used? We recommend the torrent. The installation package could get corrupted during downloads via browser because some browsers can't handle "stop and go" with this file size.

I recommend an uninstall of Enderal via Launcher (do not use the archive for Enderal - uninstall it completely). Reinstall Skyrim. Verify Intergrity of Skyrim's game cache (via Steam library). Start the Enderal Launcher. Click installation. and follow this instruction video.
