Hi,

I'd like to revert to my Skyrim installation and according to the read me I can switch between Enderal and Skyrim in the menu displayed by pressing the change installation button, but silly as that might seem, I just can't find that button in the launcher. If that matters, I installed everything from Steam. Am I missing something?

what version of Enderal do you mean?
The current version of Steam has nothing to do with the Skyrim-installation if properly installed.

The old one has the Change Installation button in the launcher, there you can return to Skyrim if everything has been installed correctly.

It's the current steam version, I installed it two days ago, and when I try to boot Skyrim through Steam it starts Enderal.

That's not supposed to happen.

how do you start Skyrim exactly, over which point,
Steam Taskbar, Steam Link in Start Bar or Desktop
or directly via the program folders and direct links to TESV.exe/skse_loader.exe?

Through my library in the steam app. I've just had Steam verify the integrity of the my Skyrim installation and it found 10 files which didn't conform so it's currently redownloading those files.
